  • Beef, Cauliflower, And Snow Peas

    Ingredients

    • 2 Tbsp. Vegetable oil
    • 2 x Chopped garlic cloves
    • 1/4 c. Minced onion
    • 2 tsp Salt Fresh grnd pepper
    • 1/4 lb Snow peas, stems removed
    • 1/2 med Cauliflower head, broken into flowerets
    • 1 c. Chicken broth/stock
    • 1 Tbsp. Cornstarch
    • 1 lb Very thin sliced flank steak
    • 1/4 c. Soy sauce

    Directions

    1. Cut steak into 2-inch strips; mix cornstarch and soy sauce and set aside.
    2. Heat chicken stock and set aside. Heat oil in heavy skillet or possibly wok till very warm. Add in garlic and cook for 2-3 min. Add in beef and saute/fry quickly, keeping it moving, just till it loses color, about 30 seconds.
    3. Add in onion, salt and pepper to taste, stirring constantly for another half minute or possibly so. Add in chicken broth, bring quickly to the boil, then add in cauliflower pcs, a few at a time. Cook 3 min, then add in snow peas, stirring constantly, for another few min. After 7 min maximum, cauliflower should be tender and pea pods a bright green. Add in soy sauce mix, mix thoroughly, and stir till thickened. Turn into heavy serving dish and serve immediately.
