Beef And Black Bean Stew
Ingredients
- 2 lb grnd beef
- 2 lrg garlic cloves chopped
- 1 med onion minced
- 1 can tomatoes - (large can) minced
- 1 c. picante sauce
- 1 tsp grnd cumin Salt to taste Freshly-grnd black pepper to taste
- 1 can Mexicorn - (abt 11 ounce) liquid removed
- 1 can black beans - (15 ounce) rinsed , liquid removed
- 1 bn green onions with 3" of tops thinly sliced
- 1 Tbsp. minced fresh cilantro or possibly flat-leaf parsley (optional)
Directions
- In a large skillet, brown grnd beef with garlic and onion; drain and transfer to the crockpot. Add in tomatoes, picante sauce, cumin, salt and pepper, corn, and black beans.
- Cook on LOW 6 to 8 hrs or possibly on HIGH for 3 to 4 hrs. Add in green onions and cilantro or possibly parsley, if using, during the last hour of cooking.
- Top with grated cheese, guacamole, or possibly lowfat sour cream, and serve with tortilla chips or possibly cornbread.
- This recipe yields 6 to 8 servings.
