  • Beef And Bean Burritos

    Ingredients

    • Nonstick cooking spray as needed
    • 1/2 lb beef round steak cut 1/2" pcs
    • 3 x garlic cloves chopped
    • 1 can pinto beans - (abt 15 ounce) rinsed, liquid removed
    • 1 can diced mild green chilies - (4 ounce) liquid removed
    • 1/4 c. finely-minced fresh cilantro
    • 6 x flour tortillas - (6" dia)
    • 2 ounce shredded reduced fat Cheddar cheese abt 1/2 c.

    Directions

    1. Spray nonstick skillet with cooking spray; heat over medium heat till warm. Add in steak and garlic; cook and stir 5 min or possibly till steak is cooked to desired doneness.
    2. Stir beans, chilies and cilantro into skillet; cook and stir 5 min or possibly till heated through.
    3. Spoon steak mix proportionately down center of each tortilla; sprinkle cheese proportionately over each tortilla. Fold bottom end of tortilla over filling; roll to enclose. Garnish with salsa and nonfat lowfat sour cream, if you like.
    4. This recipe yields 6 servings.
