  • Mexican Beef And Bean Stuffed Peppers

    Ingredients

    • 1 1/2 c. Fiber One Cereal
    • 15 ounce Tomato puree
    • 4 med Bell peppers
    • 1/2 lb Extra-lean grnd beef
    • 1 med Onion, finely minced 1/2 c.
    • 8 ounce Kidney beans, rinsed and liquid removed
    • 4 ounce Minced green chilies, undrained
    • 2 tsp Chili pwdr
    • 1/2 tsp Grnd cumin Shredded reduced-fat cheddar cheese, if you like

    Directions

    1. 1. Heat oven to 350 . Crush cereal.* Mix cereal and tomato puree; let stand 5 min.
    2. 2. Cut bell peppers lengthwise in half. Remove seeds and membranes. Place peppers, cut sides up, in rectangular baking dish, 13x9x2 inches.
    3. 3. Cook beef and onion in 10-inch skillet over medium heat, stirring occasionally, till beef is brown; drain. Stir in cereal mix and remaining ingredients except cheese. Divide beef mix proportionately among peppers.
    4. 4. Cover and bake 40 to 45 min or possibly till peppers are tender. Sprinkle each pepper with 1/2 Tbsp. cheese; let stand 5 min.
    5. 8 servings.
    6. *Place cereal in plastic bag; crush with rolling pin. Or possibly crush in blender or possibly food processor.
