    Bean and Bacon Soup

    This is an excellent soup. I used lima beans because that is what I had on hand, but any white bean would work just as well. I also used my electric pressure cooker to cook it in. This appliance is one of my favorite cooking tools.

    Ingredients

    • 16 oz. of dry lima beans
    • 9 cups water
    • 1/2 to 1 lb. of bacon
    • 1 large onion chopped
    • 3 stalks celery chopped
    • 1 16 oz can of diced tomatoes
    • 1 32 oz. container of chicken broth
    • Salt and pepper to taste

    Directions

    1. Place beans and water together in pressure cooker. Set to low pressure for 30 minutes. When finished, drain beans. Discard water.
    2. Fry Bacon to your desired consistency. Break up in pieces.
    3. Saute onion and celery in small amount of bacon drippings.
    4. Add beans, vegetables, seasonings and chicken broth to pressure cooker. Cook on low pressure for 10 minutes. Enjoy!
