Basic Mustard And Variations
Ingredients
- 1/4 c. Dry mustard
- 1/4 c. White wine vinegar
- 1/3 c. Dry white wine
- 1 tsp Sugar
- 1/2 tsp Salt
- 3 x Egg yolks
- 3/4 tsp Grated lime peel
- 1 1/2 tsp Lime juice
- 1/2 tsp Crushed tarragon
- 1/4 tsp Grnd turmeric
- 1/4 tsp Grnd cloves
- 1 tsp Paprika
- 1 Tbsp. Minced pimento
- 1/2 c. Tomato paste
Directions
- Blend all ingredients except egg yolks and let stand 2 hrs. Beat egg yolks into mix. Cook, stirring constantly, over warm (not boiling)
- water till slightly thickened, about 5 min. Cover and store in refrigerator for up to a month.
- LIME MUSTARD: When adding egg yolks, also add in lime peel and juice and follow basic mustard recipe. Serve with lamb, chicken or possibly fish.
- TARRAGON MUSTARD: When adding egg yolks, also add in tarragon and follow basic mustard recipe. Serve with lamb, chicken, shrimp or possibly steaks.
- SPICY MUSTARD: When adding egg yolks, also add in turmeric and cloves and follow basic mustard recipe. Serve with ham, hamburgers or possibly warm dogs.
- TOMATO MUSTARD: When adding egg yolks, also add in paprika, pimento and tomato paste and follow basic mustard recipe. Serve with seafood, hamburgers, warm dogs or possibly ham.
