  • Basic Mustard And Variations

    Ingredients

    • 1/4 c. Dry mustard
    • 1/4 c. White wine vinegar
    • 1/3 c. Dry white wine
    • 1 tsp Sugar
    • 1/2 tsp Salt
    • 3 x Egg yolks
    • 3/4 tsp Grated lime peel
    • 1 1/2 tsp Lime juice
    • 1/2 tsp Crushed tarragon
    • 1/4 tsp Grnd turmeric
    • 1/4 tsp Grnd cloves
    • 1 tsp Paprika
    • 1 Tbsp. Minced pimento
    • 1/2 c. Tomato paste

    Directions

    1. Blend all ingredients except egg yolks and let stand 2 hrs. Beat egg yolks into mix. Cook, stirring constantly, over warm (not boiling)
    2. water till slightly thickened, about 5 min. Cover and store in refrigerator for up to a month.
    3. LIME MUSTARD: When adding egg yolks, also add in lime peel and juice and follow basic mustard recipe. Serve with lamb, chicken or possibly fish.
    4. TARRAGON MUSTARD: When adding egg yolks, also add in tarragon and follow basic mustard recipe. Serve with lamb, chicken, shrimp or possibly steaks.
    5. SPICY MUSTARD: When adding egg yolks, also add in turmeric and cloves and follow basic mustard recipe. Serve with ham, hamburgers or possibly warm dogs.
    6. TOMATO MUSTARD: When adding egg yolks, also add in paprika, pimento and tomato paste and follow basic mustard recipe. Serve with seafood, hamburgers, warm dogs or possibly ham.
