  • Barbecued Shrimp With Billy

    Ingredients

    • 1 c. unsalted butter 2 sticks
    • 1/2 c. extra virgin olive oil
    • 2 tsp finely-chopped garlic
    • 4 whl bay leaves finely crushed
    • 2 tsp finely-crushed dry rosemary leaves
    • 1/2 tsp dry basil
    • 1/2 tsp dry oregano
    • 1/2 tsp coarse salt Cayenne pepper to taste
    • 1 Tbsp. paprika
    • 1/2 tsp freshly-grnd black pepper
    • 1 tsp freshly-squeezed lemon juice
    • 2 lb large shrimp (preferably with heads) in the shell Crusty baguette for serving

    Directions

    1. Heat oven to 450 degrees. In a heavy-bottomed ovenproof saucepan, heat butter and add in oil, stirring to combine. Add in garlic, bay leaves, rosemary, basil, oregano, salt, cayenne, paprika, pepper, and lemon juice. Cook over medium heat, stirring constantly, till the sauce begins to boil. Reduce the heat to low, and simmer, stirring frequently, for 7 to 8 min. Remove from heat, and let stand at room temperature for at least 30 min.
    2. Add in shrimp, and stir to combine. Return to heat, and cook shrimp over medium heat till the shrimp turn pink, 6 to 8 min. Transfer saucepan to oven, and bake for 8 min. Remove from oven, and serve immediately with crusty baguette.
    3. This recipe yields 10 servings as an appetizer.
