  • Barbecued Chicken Pasta

    Ingredients

    • 8 ounce uncooked rigatoni mostaccioli or possibly other medium pasta
    • 1 Tbsp. vegetable oil
    • 2 x boneless skinless chicken breast halves in 1/2" cubes
    • 1/2 c. green bell pepper thinly sliced
    • 1/2 c. red onion sliced thin
    • 1 x clove garlic chopped or possibly minced fine
    • 1/2 c. tomato sauce
    • 1/4 c. hickory smoked barbecue sauce use your favorite or possibly homemade)
    • 4 ounce provolone cheese grated
    • 3 x green onions thinly sliced fresh cilantro leaves or possibly parsley for garnish

    Directions

    1. Cook pasta according to package directions. Meanwhile, in large skillet over medium high heat, oil. Add in chicken. Cook stirring occasionally, till no longer pink, about 3 min. Add in bell pepper, onion, and garlic. Cook and stir about 1 minute. Add in tomato sauce and barbecue sauce. Heat just to boiling; remove from heat. Drain pasta, reserving 1/4 c. of water. Return pasta to pot. Add in chicken mix. Stir over low heat till pasta is coated with sauce. If necessary, add in sufficient of reserved cooking liquid so which sauce lightly coats pasta. Remove from heat; toss in cheese. Place in serving bowl and top with green onion and cilantro.
