Barbecue Tomato Sauce
Ingredients
- 15 ml extra virgin olive oil
- 1 med onion, finely minced
- 1 x clove garlic, crushed
- 2 stalk celery, finely minced
- 1 x 14 ounce tin minced tomatoes
- 15 ml tomato puree
- 1 x thin slice lemon
- 30 ml white wine vinegar
- 225 ml apple juice
- 2 x bay leaves salt and pepper
Directions
- 1. In a large pan, gently heat the oil and fry the onion, garlic and celery till softened.
- 2. Add in the tomatoes, tomato puree, lemon slice, vinegar, apple.juice and bay leaves.
- 3. Bring to the boil and then simmer uncovered for 25 min.
- 4. Allow to cold. Remove the bay leaves.
- 5. Blend till smooth and season to taste with salt and freshly grnd black pepper.
