  • Barbecue Stew (Not Brunswick Stew)

    Ingredients

    • 1/3 lb Smoked pork (butt or possibly shoulder), smoked Minced
    • 1 med Onion, minced
    • 1 quart Tomatoes, canned
    • 2 Tbsp. Worcestershire sauce
    • 1 c. Catsup
    • 1 Tbsp. Texas Pete Warm Sauce
    • 1 x Bay leaf
    • 3 Tbsp. Bottled chili sauce
    • 1/4 tsp Dry mustard
    • 1 dsh Cayenne pepper
    • 2 Tbsp. Vinegar
    • 1 sm Can butter beans
    • 1 sm Can corn
    • 3 med Potatoes, diced
    • 1 quart Water
    • 2 Tbsp. BBQ Sauce
    • 1 Tbsp. Soy sauce

    Directions

    1. Put every thing except the beans and corn In a large pot. Simmer(don't boil) for 2 1/2 hour stirring occasionally till the potatoes are nearly done add in vinegar and vegetables. Simmer till potatoes are done. Remove Bay leaf before serving.
    2. Serving Ideas : Serve with crackers and corn bread as meal.
    3. NOTES : Potatoes become grainy if frzn. If you wish to freeze, only add in potatoes to the portion for this meal.
