Barbara's Sweet Potato Souffle
Ingredients
- 2 (40 ounce) cans sweet potatoes
- 2 large eggs (whole) beat well before adding
- 1 stick butter, softened
- 3/4 c. brown sugar
- 1/2 c. orange juice
- 1/4 c. sherry
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon salt
Directions
- Mash sweet potatoes in large mixing bowl. Add in butter and stir. Add in orange juice - stir. Add in sherry - stir. Add in large eggs - stir. Add in cinnamon, nutmeg and salt plus brown sugar and mix well.Grease 4 qt pyrex bowl with butter and spoon in mix. Cover and chill overnight. Place large marshmallows over top of mix. Cook uncovered at 350 for 15-25 min or possibly till marshmallows brown.
