  • Aunt Carolyn's Sweet Potatoes

    Ingredients

    • 1 lrg Sweet potatoes, canned
    • 2/3 c. Syrup from can of sweet Potatoes
    • 2 x Large eggs -- beaten
    • 1/4 c. Butter
    • 1/4 c. Evaporated lowfat milk
    • 1/4 c. Sugar
    • 2 tsp Vanilla

    Directions

    1. Topping: 1 c. brown sugar 1 c. pecans - minced 1/2 c. flour 1/4 c. butter
    2. In a 2 qt saucepan, heat the sweet potatoes and syrup from the can till warmed through and syrup is just boiling. Transfer warm potatoes and 2/3 c. liquid to a large mixing bowl and mash the sweet potatoes with fork or possibly potato masher. Add in the Large eggs, margarine, evaporated lowfat milk, sugar, and vanilla and mix thoroughly with a spoon. Pour mix into a square baking dish. For the topping: Heat margarine on the stove or possibly in microwave. Mix brown sugar, minced pecans, and flour in a small bowl. Add in margarine and stir till dry ingredients are moistened. Cover sweet potato mix with topping and bake at 350 F for 30 min.
