    Ingredients

    • 3 large eggs
    • 1/2 cup whipping cream
    • 1 cup sugar
    • 1 cup firmly packed brown sugar
    • 1/4 cup light rum
    • 1 tbsp banana extract
    • 4 cups milk
    • 1/4 cup butter
    • 1 16 oz loaf of stale french bread, cubed
    • SAUCE:
    • 1/2 cup butter
    • 1/2 cup firmly packed brown sugar
    • 1/4 cup dark rum
    • 1/2 tsp banana extract
    • 2 bananas, sliced

    Directions

    1. Stir together first six ingredients in a large bowl. Heat milk and butter in a large saucepan over medium high heat until melted, do not boil. Stir 1/4 of the milk mixture into the eggs, stirring constantly. Slowly pour remining milk into the eggs, stirring constantly.
    2. Place bread cubes into a lightly greased 13x9 baking dish. Pour egg mixture evenly over bread. Press bread down into liquid.
    3. Bake at 325 for 45 to 55 minutes. Remove from oven. Let stand 30 minutes before serving.
    4. To make the sauce: Combine ingredients in a saucepan and cook over medium high heat, stirring constantly. Do not boil. Remove from heat.
    5. Place a serving of pudding on a dish, dress with sliced bananas, and drizzle with sauce.
