Bananas Foster Bread Pudding
Ingredients
- 3 large eggs
- 1/2 cup whipping cream
- 1 cup sugar
- 1 cup firmly packed brown sugar
- 1/4 cup light rum
- 1 tbsp banana extract
- 4 cups milk
- 1/4 cup butter
- 1 16 oz loaf of stale french bread, cubed
- SAUCE:
- 1/2 cup butter
- 1/2 cup firmly packed brown sugar
- 1/4 cup dark rum
- 1/2 tsp banana extract
- 2 bananas, sliced
Directions
- Stir together first six ingredients in a large bowl. Heat milk and butter in a large saucepan over medium high heat until melted, do not boil. Stir 1/4 of the milk mixture into the eggs, stirring constantly. Slowly pour remining milk into the eggs, stirring constantly.
- Place bread cubes into a lightly greased 13x9 baking dish. Pour egg mixture evenly over bread. Press bread down into liquid.
- Bake at 325 for 45 to 55 minutes. Remove from oven. Let stand 30 minutes before serving.
- To make the sauce: Combine ingredients in a saucepan and cook over medium high heat, stirring constantly. Do not boil. Remove from heat.
- Place a serving of pudding on a dish, dress with sliced bananas, and drizzle with sauce.
