    Ingredients

    • 1 cup oat bran hot cereal, uncooked
    • 1/2 cup all-purpose flour
    • 2 tsp baking powder
    • 1 tbsp sugar and sucralose blend for baking
    • 1/4 tsp salt
    • 4 ripe bananas, sliced, divided
    • 1 cup 2% milk
    • 1 large egg
    • non-stick cooking spray
    • 1/2 cup reduced-sugar strawberry preserves
    • Sugar-Free hot fudge topping, warmed according to directions
    • Whipped topping, optional

    Directions

    1. Combine the oat bran, flour, baking powder, sugar and salt in a small bowl. Mash two of the ripe bananas; combine with milk and egg. Add egg mixture to flour mixture, stirring just until combined.
    2. Heat a griddle or large skillet over medium heat. Spray surface with non-stick cooking spray. Pour scant 1/4 cup of batter for each pancake onto hot surface. Cook until bubbly; turn and cook remaining side until golden brown.
    3. Cook preserves in a small microwave-safe bowl on HIGH (100% power) for 15 seconds or until melted. Stir. Serve pancakes topped with sliced bananas, drizzled strawberry preserves and hot fudge topping; dollop with whipped topping, if desired.
