  • Candy Apple Pancakes

    Ingredients

    • 1 x pancake
    • 1 Tbsp. creme patissiere (or possibly thick custard)
    • 1 x ball of cinnamon ice cream
    • 1 Tbsp. good caramel sauce Apple puree
    • 12 x eating apples peeled cored minced
    • 120 gm unsalted butter
    • 120 gm caster sugar good healthy pinch of cinnamon

    Directions

    1. For the apple puree heat the butter in a pan and add in the apples sugar and cinnamon.
    2. Cover and cook over a gentle heat till completely soft then cold.
    3. To assemble place 1 tbsp pureee in the centre of the pancake.
    4. Top with the creme patissiere (or possibly custard) then mix in the edges of the pancake to create a parcel.
    5. Tum over and heat in a microwave for 20 seconds.
    6. Using a fish slice place on a serving plate dust with icing sugar then put the ice cream on the side.
    7. Drizzle with caramel sauce.
    8. Serves 4
