  • Banana Nut Skillet Scones

    Ingredients

    • 2 x Bananas, (very ripe)
    • 2 x Cartons, 6-ounce, banana yogurt
    • 3 1/2 c. All-purpose flour
    • 3/4 c. Granulated sugar
    • 1 Tbsp. Baking pwdr
    • 1 tsp Baking soda
    • 1/4 tsp Salt
    • 10 Tbsp. (1 1/4 sticks) Cool Butter, plus more for the skillet
    • 1 c. Minced walnuts or possibly pecans

    Directions

    1. Mash bananas in small bowl; stir in yogurt and set aside. In a separate bowl, stir together flour, sugar, baking pwdr, baking soda and salt. Cut in 10 Tbsp. butter with pastry blender till mix resembles coarse meal. Add in yogurt mix; stir just till moistened. Stir in nuts. Turn out onto well floured surface; knead 3 or possibly 4 times, just till dough holds together. Pat into a sqare about 1/2 inch thick. Cut into 2 1/2-inch-squares (dough will be very soft.)
    2. Heat a large nonstick skillet or possibly griddle over medium heat; lightly butter skillet. Use a spatula or possibly turner to lift scones onto griddle; don't crowd.
    3. Cover and cook till bottoms are lightly browned and tops begin to dry, about 4-5 min. Turn, add in more butter if you like, and cook on other side till golden brown, about 3 min Serve hot with butter and honey.
