  • Banana Nut and Chocolate Chip Bread

    This is a delicious banana nut bread recipe based on Fanny Farmer's recipe with chocolate chips. This was the basic recipe that my husband's mom used when she made banana nut bread. We added the chocolate chips when one of my neighbors made banana nut bread and he used chocolate chips in his, which my kids loved. I stole the idea and have been making it that way ever since. My family loves to eat this piping hot from the oven with the chocolate chips still gooey. I use Ghirardelli semi-sweet chocolate chips, my favorite, but any chocolate chips will work. This can be dairy-free without the butter.

    Ingredients

    • 3 ripe bananas, well mashed
    • 2 large eggs, beaten (Egg Beaters work well)
    • 2 cups flour
    • 3/4 cup sugar
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 1/2 cup walnuts, chopped
    • 1/2 cup chocolate chips
    • 2 tablespoons butter, melted and cooled (optional)

    Directions

    1.
    In a large bowl, mix the bananas and eggs.
    2.
    In a separate small bowl, mix the flour, sugar, baking soda and salt.
    3.
    Add the flour mixture into the banana mixture and stir until combined.
    4.
    Stir in the nuts and chocolate chips.
    5.
    If using the butter, stir it in until well combined.
    6.
    Pour into a greased loaf pan (can use Pam).
    7.
    Bake 350 degrees for 1 hour.
