Banana Kiwi Pudding
Ingredients
- 1 1/3 c. Cooked rice
- 1 1/3 c. Skim lowfat milk
- 1 tsp Vanilla Low-calorie sugar substitute to equal 2 Tbsp. sugar
- 1 x Ripe banana
- 1/4 c. Whipping cream, whipped
- 2 x Kiwi fruit, sliced, for garnish
Directions
- Cook rice and lowfat milk in 2-qt saucepan over medium heat till thick and creamy, 5 to 8 min, stirring frequently. Remove from heat; cold. Stir in vanilla and sugar substitute. Just before serving, mash banana; fold banana and whipped cream into pudding. Garnish with kiwi fruit slices.
- Makes 4 servings.
