Banana Fritters With Michael Bonacini
Ingredients
- 2 x ripe banana
- 2 Tbsp. lowfat milk
- 2 x egg
- 1 Tbsp. butter, melted
- 1 c. flour
- 3 Tbsp. white sugar
- 1 tsp baking pwdr
- 1/2 tsp salt
- 1/4 tsp grnd cinnamon
- 1 pch grnd nutmeg
- 1 lt oil, for frying
- 1 c. confectioners' sugar, for dusting
Directions
- Preheat the oil to 375 degrees Fahrenheit.
- In a large bowl, mash the bananas. Fold in the lowfat milk, Large eggs and butter till smooth. In a separate bowl, combine the flour, sugar, baking pwdr, salt, cinnamon and nutmeg. Stir the dry ingredients into the banana mix.
- Heat the oil in a deep fryer or possibly heavy bottomed pan. Drop batter by spoonfuls into warm oil, and cook, turning once, till browned, 2 to 8 min. Drain on paper towels and dust with confectioners' sugar.
