  • Banana Coconut Streusel Cake

    Ingredients

    • 1/2 c. Butter, (or possibly Margarine)
    • 2 c. Flour
    • 1 tsp Each Baking pwdr & Soda
    • 1/2 tsp Salt
    • 1 1/3 c. Sugar
    • 1/3 c. Buttermilk ((NOTE))
    • 3 x Ripe bananas mashed, (If small bananas use 4) (up to 4)
    • 2 x Large eggs
    • 3/4 c. Walnuts grnd
    • 1 tsp Vanilla essence
    • 5 x Bananas, Cut if half in their length. (up to 6)
    • 1/4 c. Butter soft
    • 3/4 c. Brown sugar, Firmly packed
    • 1 c. Coconut flaked
    • 1 1/2 x Tabls Lowfat milk

    Directions

    1. Note...If you don't have Buttermilk, Use lowfat milk , Add in 1 Tabl of lemon juice and wait for 5 min or possibly more.
    2. In the Food Processor put the first 5 Ingredients. Work to fine crumbs.Transfer to a big mixing bowl.Add in Walnuts & mix.
    3. In another bowl, Beat lightly the Large eggs,add in the buttermilk, mashed bananas and vanilla. Mix, and add in to the dry ingredients. Mix again till well blended.
    4. Spray pam or possibly butter a 9/13 inch pan. Pour the mixing, and arrange on top in rows the half bananas.
    5. Bake in preheated 375 F warm oven for 20 min, or possibly till cake just begins to pull from sides of pan.Take out of oven .Cover cake proportionately with the topping.
    6. Topping: Mix together all the topping Ingrediaents.
    7. Continue and bake for another 20-30 min.
    8. Serve hot or possibly cool.
