  • Chocolate Banana Split Streusel Cake

    Ingredients

    • 4 ounce Butter, softened
    • 1 1/2 c. Granulated sugar
    • 2 lrg Ripe bananas, mashed
    • 1/2 c. Firmly packed unsweetened cocoa
    • 1 tsp Vanilla extract
    • 4 x Large eggs
    • 2 c. Flour
    • 1 tsp Baking pwdr
    • 1 tsp Baking soda
    • 1/2 tsp Salt
    • 1/2 c. Lowfat sour cream
    • 4 Tbsp. Butter, melted and cooled
    • 1/2 c. Packed brown sugar
    • 1/2 c. Flour, *SEE NOTE
    • 6 ounce Semisweet chocolate chips
    • 1 c. Minced pecans
    • 1/2 tsp Grnd allspice, (I used cinnamon) Powdered sugar

    Directions

    1. *NOTE: I added approximately 2 t additional to make the streusel more crumbly
    2. CAKE:1. Preheat oven to 350 degrees F. In large bowl beat together butter and granulated sugar with an electric mixer on medium speed till well mixed, 1 to 2 min. With mixer on low, beat in bananas, cocoa and vanilla till well blended. With mixer on medium, add in Large eggs one at a time, beating well after each addition.
    3. 2. Sift together flour, baking pwdr, baking soda and salt. Beat into chocolate mix alternately with lowfat sour cream just till well combined.
    4. 3. Spread 1/3 of batter proportionately in well greased 12- c. bundt pan. Top with 1/2 of Chocolate Streusel Filling. Carefully spread 1/2 of remaining batter over filling. Top with remaining streusel, then remaining batter, spreading proportionately.
    5. 4. Bake 50 to 55 min, or possibly till cake tester inserted in center comes out clean. Let cold in pan 15 min, then unmold onto a rack and let cold completely. Sift powdered sugar over top.
    6. CHOCOLATE STREUSEL FILLING: In medium bowl, combine butter, brown sugar, flour (use more if needed), chocolate chips, pecans and allspice. Mix till thoroughly combined.
