Banana, Coconut And Macadamia Bread
Ingredients
- 1 1/3 c. mashed bananas
- 2 Tbsp. vegetable oil
- 2 Tbsp. honey
- 2 Tbsp. coconut extract
- 1 tsp salt
- 1 tsp grated lemon peel
- 1 c. flaked coconut
- 1 1/2 c. whole wheat flour
- 2 1/2 c. bread flour
- 2 tsp yeast
- 2/3 c. minced macadamia nuts
Directions
- NOTES: Use fully or possibly overly ripe bananas. Adjust the consistency of the dough while its kneading if necessary. Vanilla extract can be substituted for the coconut extract and almonds for the macadamia nuts.
- Set crust color to light. Add in nuts at the beginning of the second kneading period.
