  • Banana Chocolate Chip Muffins

    Ingredients

    • 3 lrg Bananas, ripe
    • 1/2 c. Butter, softened
    • 1/2 c. Brown sugar, firmly packed
    • 2 x Large eggs
    • 1/4 c. Lowfat milk
    • 1 tsp Vanilla
    • 2 c. All-purpose flour
    • 1 tsp Baking pwdr
    • 1 tsp Baking soda
    • 1/4 tsp Salt
    • 1/2 c. Miniature chocolate chips

    Directions

    1. 1. (Adult assistance may be needed for this step.) - Heat oven to 375 F.
    2. 2. Place 18 paper baking c. in 18 muffin pan c..
    3. 3. Peel bananas and place in pie pan. Mash bananas with fork. Save till Step 8.
    4. 4. Place butter in large bowl. Measure and add in brown sugar.
    5. 5. Beat with wooden spoon till well mixed.
    6. 6. Crack Large eggs 1 at a time into custard c. and add in to brown sugar mix.
    7. 7. Measure and add in lowfat milk and vanilla.
    8. 8. Add in bananas and mix well.
    9. 9. Lightly spoon flour into measuring c. and level off with spatula. Add in flour to banana mix.
    10. 10. Measure, level off with spatula and add in baking pwdr, baking soda, and salt. Stir with wooden spoon just till all dry ingredients are moistened.
    11. 11. Measure and stir in chocolate chips.
    12. 12. Spoon batter into paper-lined muffin c., pushing batter from spoon with rubber scraper, till each c. is a little more than half full.
    13. 13. (Adult assistance may be needed for this step.) - Set timer and bake muffins at 375 F for 20 to 25 min or possibly till a toothpick inserted into
    14. the center of a muffin comes out clean.
    15. 14. (Adult assistance may be needed for this step.) - Using potholders, remove pans from oven. Place pans on wire racks and let muffins cold in
    16. pans for 3 min.
    17. 15. Remove muffins from pans and serve hot.
