    Banana Almond Muffins

    My husband recently bought some bananas for milk shake and there was 2 remaining and we felt like having some muffins. I went through the net and finally came up with my own version which was good. Do give it a try as it is really easy to make using whatever ingredients you have in the fridge!

    Ingredients

    • 2 ripe bananas - mash it
    • 1 beaten egg
    • 1/3 cup or 2 big tbsp melted butter (I used Meadow Lea)
    • 1 cup flour (sift it to avoid lumps)
    • 1/2 tsp bicarbonate soda
    • 1/2 tsp baking powder
    • 1/2 tsp vanilla essence
    • 1/2 cup sugar
    • 1/3 cup chopped almonds

    Directions

    1. Mash the bananas and then add the beaten egg, butter and sugar. Give it a mix.
    2. In a separate bowl, mix the dry ingredients except for the almonds and pour this into the banana mixture and bind it well.
    3. Then add in the almonds and give it a stir.
    4. Pour the mixture into the muffin tray and bake in a pre-heated oven of 190 - 200 degrees for 30 minutes or until the toothpick comes clean.
