Balsamic And Roasted Garlic Dipping Oil
Ingredients
- 25 x Garlic cloves, (unpeeled)
- 2 Tbsp. Plus 1 c. extra virgin olive oil, (preferably extra-virgin)
- 1/2 c. Balsamic vinegar
- 2 1/2 tsp Chopped fresh rosemary
Directions
- Preheat oven to 350F. Place unpeeled garlic cloves in baking dish.
- Add in 2 Tbsp. extra virgin olive oil and sprinkle with salt and pepper; toss to coat. Cover dish tightly with foil and bake till garlic is golden and tender, about45 min. Cold.
- Squeeze garlic between fingertips to release cloves. Transfer garlic cloves to blender. Add in vinegar and rosemary and puree herb mix till smooth. With machine running, gradually add in remaining 1 c. extra virgin olive oil. Season to taste with salt and pepper. (Dipping oil can be prepared 1 day ahead. Cover and chill. Let stand 15 min at room temperature and whisk before using.)
