  • Baked Salmon with Cilantro

    This recipe is so delicious. It will be more delicious with a bed of Angel Hair Pasta.

    Ingredients

    • 1/4 cup butter
    • 1 tbsp grated lemon peel
    • 1 pound salmon, snapper or other medium firm fish fillets. About 1 inch thick
    • 1/4 tsp salt
    • 1/4 tsp ground cumin
    • 1 tbsp lemon juice

    Directions

    1. Heat oven to 425.
    2. Line rectangle pan with aluminum foil, spray foil with cooking spray
    3. Mix butter, cilantro and lemon peel.
    4. Cover and refrigerate butter while preparing fish.
    5. Cut into 4 servings. Place fish skin side down. In pan. Sprinkle with salt and cumin. Drizzle with lemon juice.
    6. Bake uncovered 15 to20 minutes or until fish flakes easily with fork. Carefully lift fish from pan. Top with cilantro and butter mixture.
