Baked Salmon with Cilantro
This recipe is so delicious. It will be more delicious with a bed of Angel Hair Pasta. Ingredients
- 1/4 cup butter
- 1 tbsp grated lemon peel
- 1 pound salmon, snapper or other medium firm fish fillets. About 1 inch thick
- 1/4 tsp salt
- 1/4 tsp ground cumin
- 1 tbsp lemon juice
Directions
- Heat oven to 425.
- Line rectangle pan with aluminum foil, spray foil with cooking spray
- Mix butter, cilantro and lemon peel.
- Cover and refrigerate butter while preparing fish.
- Cut into 4 servings. Place fish skin side down. In pan. Sprinkle with salt and cumin. Drizzle with lemon juice.
- Bake uncovered 15 to20 minutes or until fish flakes easily with fork. Carefully lift fish from pan. Top with cilantro and butter mixture.
