Baked Potato Soup With Bacon
Ingredients
- 1 lb Baking Potatoes Cubed
- 2 c. 2% Low-Fat Lowfat milk
- 2 tsp Reduced-Calorie Margarine
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1/4 c. Sliced Green Onions
- 4 tsp Bacon Bits
Directions
- Place potato cubes in a medium saucepan; cover with water, and bring to a boil. Cook 15 min or possibly till very tender; drain. Return potatoes to pan, and mash to desired consistency. Add in lowfat milk, margarine, salt, and pepper; stir well. Cook over medium heat till thoroughly heated, stirring frequently.
- Ladle soup into each of 2 bowls; top with green onions and bacon bits.
