    Homemade Baked Potato Soup

    Have left over potatoes? Don't know what to do with them? Make this wonderful soup... You will love it and so will your family. Easy to make and you can put it on the table in 30 minutes or less.

    Ingredients

    • 8 slices of bacon
    • 1/4 cup plus 3 tablespoons all purpose flour
    • 1/2 cup margarine
    • 4 2/3 cups milk
    • 3 or 4 baked potatoes
    • 1 small sweet onion, chopped
    • 2/3 cup sour cream
    • 3/4 teaspoon salt
    • 3/4 teaspoon black pepper
    • Chives
    • Shredded Cheddar Cheese

    Directions

    1. Fry bacon in a dutch oven or stock pot over medium heat until crispy, crumble and set aside for later use.
    2. Add margarine to bacon drippings stir until melted
    3. Add the chopped onion and cook until translucent...
    4. Add the flour, stir slowly to make a roux...you may need to add a bit more margarine to keep the mixture smooth.
    5. Add the milk slowly to the flour mixture whisking constantly until thickened.
    6. Chop the potatoes into small cubes then add to the milk/flour mixture.
    7. Bring mixture to a boil, stirring frequently.
    8. Add the sour cream, salt, pepper and crumbled bacon, cook an additional 10 minutes.
    9. Serve with chives and cheddar cheese as garnish..
