Homemade Baked Potato Soup

- 8 slices of bacon
- 1/4 cup plus 3 tablespoons all purpose flour
- 1/2 cup margarine
- 4 2/3 cups milk
- 3 or 4 baked potatoes
- 1 small sweet onion, chopped
- 2/3 cup sour cream
- 3/4 teaspoon salt
- 3/4 teaspoon black pepper
- Chives
- Shredded Cheddar Cheese
Directions
- Fry bacon in a dutch oven or stock pot over medium heat until crispy, crumble and set aside for later use.
- Add margarine to bacon drippings stir until melted
- Add the chopped onion and cook until translucent...
- Add the flour, stir slowly to make a roux...you may need to add a bit more margarine to keep the mixture smooth.
- Add the milk slowly to the flour mixture whisking constantly until thickened.
- Chop the potatoes into small cubes then add to the milk/flour mixture.
- Bring mixture to a boil, stirring frequently.
- Add the sour cream, salt, pepper and crumbled bacon, cook an additional 10 minutes.
- Serve with chives and cheddar cheese as garnish..
