Baked Pork Bangers with Apples

- 8-12 pork sausages
- 3 apples, cored, and sliced into wedges
- 4 potatoes, peeled, and diced into cubes
- 16 baby carrots, lightly scraped and rinsed
- 2 red onions and 2 large white onion, peeled and sliced into wedges
- 4 teaspoons smooth honey
- Juice of 1 lemon
- 2 twigs of fresh rosemary petals
- ½ cup olive oil
- 2 teaspoons smoked paprika powder
Directions
- Preheat the oven to 200 degrees Celsius.
- Place all the vegetables, fruit and sausages in a shallow roasting tin, add the olive oil, a sprinkle of salt and the paprika and toss well.
- Place the rosemary twigs in with the mixture.
- Roast for about 20 minutes until nicely browned and cooked through.
- Remove from oven, mix the lemon juice in with the honey, drizzle over the vegetables and sausage, toss lightly and serve.
- If you want to bulk out the dish serve it with pasta or couscous.
