    This is a dish for when you want a tasty and easy to make one-dish meal without having to spend hours in the kitchen. use good pork sausages and a combination of sweet potatoes, onions, quince or apples, and carrots, but you can use a combination to suit whatever you feel like and whatever is fresh .These include potatoes, butternut, apples, courgettes, turnips and other firm fruits and vegetables

    Ingredients

    • 8-12 pork sausages
    • 3 apples, cored, and sliced into wedges
    • 4 potatoes, peeled, and diced into cubes
    • 16 baby carrots, lightly scraped and rinsed
    • 2 red onions and 2 large white onion, peeled and sliced into wedges
    • 4 teaspoons smooth honey
    • Juice of 1 lemon
    • 2 twigs of fresh rosemary petals
    • ½ cup olive oil
    • 2 teaspoons smoked paprika powder

    Directions

    1. Preheat the oven to 200 degrees Celsius.
    2. Place all the vegetables, fruit and sausages in a shallow roasting tin, add the olive oil, a sprinkle of salt and the paprika and toss well.
    3. Place the rosemary twigs in with the mixture.
    4. Roast for about 20 minutes until nicely browned and cooked through.
    5. Remove from oven, mix the lemon juice in with the honey, drizzle over the vegetables and sausage, toss lightly and serve.
    6. If you want to bulk out the dish serve it with pasta or couscous.
