    I’ve been a little MIA the past week and its mostly because I have just been crazy busy and was prepping for our cooking challenge that we did over the weekend {by the way, cannot wait to get the video done so I can share}. I am finally back with a new recipe for you and its a great one!! I’ve already made this Baked Maple Blueberry Oatmeal twice because yes its that good! If you’ve been following along here you know that I’ve been working hard to get back on track with healthier eating, especially during the week. This baked oatmeal is the perfect easy breakfast!

    Mornings in our house always seem so rushed even though my oldest doesn’t get on the bus until almost 9! I don’t know what it is, maybe its just partly because I’m not a morning person and well, the big guy sometimes puts up a good fight about going to school. Anyhow, I am always trying to figure out ways to make the mornings go as easily as possible and this Baked Maple Blueberry Oatmeal definitely helps with that!

    This one is healthy so I can feel good about enjoying it as well as feeding it to my family but it tastes great too! You can go ahead and make this the day before you plan on enjoying it then simply heat up individual portions, drizzle a little maple syrup or honey over top and enjoy! Oatmeal is a great one to enjoy for breakfast because it will keep you feeling full all morning. This recipe is so simple to throw together and you can go ahead and tailor it to your liking; switching up what fruit you use and whatnot. All the ingredients are mixed up in a bowl and poured into a 12×8 baking pan and baked until lightly golden and set.

    3 cups quick cooking oats 2 eggs ⅓ cup real maple syrup 1¼ cups fat free milk 2 tsp vanilla ½ stick unsalted butter, melted 1 pint fresh blueberries cinnamon & powdered sugar for sprinkling Instructions

    Preheat your oven to 350 degrees. In a bowl stir together all the ingredients until well combined. Spray a 12x8 baking dish with non stick spray and pour the mixture in. Spread out evenly. Bake for approximately 40 minutes or until set and lightly golden. Sprinkle the top with cinnamon and a little powdered sugar. Serve with warm maple syrup. 3.5.3208
