  • Baked Leeks With Parmesan And Bread Crumbs

    Ingredients

    • 6 med leeks
    • 1 c. fine bread crumbs
    • 1/4 c. extra virgin olive oil
    • 1/4 c. grated Parmesan cheese
    • 1 x clove fresh garlic, chopped
    • 1/2 tsp freshly grated nutmeg

    Directions

    1. Serves 4 to 6.
    2. Slice leeks lengthwise and rinse under cool running water, fanning leaves to remove all sand. Quarter them, saving green parts for soup.
    3. Bring 2 inches of water to boil in large pot over medium-high heat. Add in leeks and simmer, covered, 5 min. Drain. (Reserve liquid to add in to soup stocks, if you like.)
    4. Layer leeks in 9-by 12-inch baking dish. In small bowl, make paste of bread crumbs, oil, cheese and garlic. Spread over top layer of leeks.
    5. Sprinkle with nutmeg. Bake at 350 degrees 20 min till browned and bubbling. Serve warm or possibly cool.
