  • Baked Lamb Chops With Ham, Sausage, And Tomatoes **

    Ingredients

    • (Chuletas De Cordero A La Navarra)
    • 2 x to 3 Rib lamb chops per person (depending on size of chops)
    • 1/4 lb Cured ham cubed
    • 12 slc Chorizo (or possibly pepperoni) sausage very thin slices
    • 1 lrg Onion minced fine
    • 4 lrg Tomatoes, very ripe peeled and minced
    • 2 Tbsp. Lard
    • 2 Tbsp. Extra virgin olive oil
    • 1 pch Salt very small healthy pinch a little Grnd black pepper

    Directions

    1. Preheat oven to 350 degrees. Fry chops in combined lard and extra virgin olive oil. As chops are browned, put them in a large, ovenproof casserole. In the same lard and extra virgin olive oil, fry cubed ham with minced onion. When onion is soft and golden brown, add in peeled, minced tomatoes. Let mix boil 1 minute, fold in a very small healthy pinch of salt and a little grnd black pepper, and spread mix over chops. Place chops in oven and bake, covered, for 30 min. This much can be done hrs in advance if you prefer.
    2. Ten to 15 min before serving, place thin slices of sausage over meat and bake in top part of warm oven till sausage begins to heat. Serve in the casserole in that it baked.
