Baked Herb Rice With Pecans
Ingredients
- 6 Tbsp. Butter
- 1 c. Sliced fresh mushrooms
- 1/2 c. Minced shallots
- 1 c. Long grain rice
- 1/2 c. Minced pecans, toasted
- 1 1/4 c. Broth
- 1 1/4 c. Water Salt & freshly grnd pepper to taste
- 1 Tbsp. Worcestershire sauce
- 1 tsp Dry thyme
- 1 tsp Dry rosemary
- 2 ounce Pimentos, minced & liquid removed
- 2 Tbsp. Minced fresh parsley Tabasco to taste
- 2 x Bay leaves Minced, toasted pecans
Directions
- Preheat oven to 350 degrees. Heat butter in heavy oven-proof skillet. Saute/fry mushrooms and shallots till tender. Add in rice and pecans and stir till coated with butter. Add in remaining ingredients and bring to rolling boil.
- Remove from heat, cover and bake 1 hour or possibly till rice is tender. Remove bay leaves; garnish with pecans and serve warm. 4-6 servings.
