Baked Flounder with Parmesan Crumbs
You can substitute other mild white fish, such as cod or haddock; cook it a little longer for thicker fish, and reduce oven temp to 400. This is my favorite cool-weather easy fish recipe for company. I've never made it with fresh bread crumbs; I use store-bought Panko bread crumbs. You can use less cheese and butter, and it still tastes great. Ingredients
- 4 flounder fillets (1 1/2 to 2 pounds total)
- salt and freshly ground pepper
- 3/4 cups freshly grated Parmesan cheese (or less)
- 1/2 cup coarse fresh bread crumbs (I use Panko crumbs)
- 4 Tbsp unsalted butter, melted (or less)
- 2 Tbsp extra-virgin olive oil
Directions
- Preheat the oven to 425 (or 400 for thicker fish)
- In a large baking dish, season the fish fillets with salt and pepper. Mix the Parmesan with the bread crumbs, melted butter, and olive oil and sprinkle over the fillets.
- Bake for 10 to 15 minutes, or until the fish is cooked and the topping is golden. Let stand for 5 minutes before serving.
