  • Baked Fish With Mushrooms And Basil

    Ingredients

    • 1 1/2 lb white fish fillets abt 3/4" thick
    • 2 tsp extra virgin olive oil - (to 3 tspns) (optional) Salt to taste Freshly-grnd black pepper to taste
    • 1/4 c. shredded basil leaves
    • 6 ounce mushrooms sliced
    • 3 Tbsp. dry white wine

    Directions

    1. Seafood Alternatives: orange roughy, red snapper, halibut Preheat the oven to 425 degrees. Lightly butter or possibly oil a baking dish and arrange the fish fillets in it, tucking under thin ends if necessary so the fillets are in an even layer.
    2. Brush the tops of the fillets with extra virgin olive oil if desired, then season lightly with salt and pepper. Sprinkle the basil proportionately over the fish, top with mushrooms, pour in the wine and cover the dish with foil.
    3. Bake in the preheated oven till opaque through the thickest part, 12 to 18 min, depending on the thickness of the fillets.
    4. Transfer the fish fillets and mushrooms to individual plates and spoon a little of the cooking juices over. Serve immediately.
    5. This recipe yields 4 servings.
