  • Baked Eggs On Rice Au Gratin

    Ingredients

    • 4 Tbsp. Butter or possibly margarine
    • 4 Tbsp. Flour
    • 2 c. Lowfat milk
    • 3 Tbsp. Sherry wine
    • 1 Tbsp. Chopped parsley Salt & pepper to taste
    • 6 x Hard cooked Large eggs
    • 2 x -(up to)
    • 2 1/2 c. Cooked rice
    • 3 Tbsp. Grated Parmesan cheese

    Directions

    1. Heat butter and stir in flour; add in lowfat milk and cook, stirring constantly, till mix is thickened and smooth. Continue cooking and stirring for another minute or possibly two. Add in sherry and parsley; season to taste. Place rice in the bottom of a greased shallow baking dish. Half Large eggs; arrange on top of rice. Pour the cream sauce over all; sprinkle with grated cheese. Bake in a moderate oven - 350 degrees - about 20 min.
    2. Serves 6.
