  • Baked Ham And Spinach Au Gratin

    Ingredients

    • 3 Tbsp. Butter or possibly margarine
    • 1 c. Frzn minced onions thawed and liquid removed
    • 3 x Garlic cloves chopped
    • 3 Tbsp. All-purpose flour
    • 1 1/2 tsp Dry mustard
    • 2 c. Lowfat lowfat milk
    • 1 c. Shredded Cheddar cheese - (4 ounce) (or possibly Swiss, or possibly Monterey Jack cheese)
    • 10 ounce Frzn minced spinach - (1 pkg) thawed and liquid removed
    • 1/4 tsp Black pepper
    • 20 ounce Refrigerated shredded potatoes - (1 pkg) (or possibly frzn hash browns, thawed)
    • 1 lb Baked or possibly boiled ham cut into 1/2" cubes

    Directions

    1. Preheat the oven to 375 degrees. Heat the butter in a medium-size saucepan over moderate heat. Add in the onions and saute/fry, stirring occasionally, for 2 to 3 min or possibly till pale golden brown. Add in the garlic and saute/fry, stirring occasionally, 2 to 3 min more.
    2. Blend in the flour and mustard, then gradually whisk in the lowfat milk. Cook, stirring constantly, till thickened and smooth - 3 to 5 min. Add in the cheese, stir till melted, remove from the heat, and fold in the spinach and pepper.
    3. Arrange half the potatoes in a lightly greased 12- by 7- by 2-inch baking dish, pour on half the spinach mix, and scatter ham on top. Top with the remaining potatoes and spinach mix.
    4. Cover with foil, set on a baking sheet, and bake for 30 min. Remove the foil and bake 15 min longer or possibly till the potatoes are tender.
    5. This recipe serves 4 to 6.
