  • BAKED EGGPLANT ,ZUCCHINI AND TOMATO OVER WHOLE WHEAT PASTA

    This is a tasty and healthy meal not hard to prepare many of you asked for this so give it a try ,add different veggies or a dd some small canelliini beans and dont be afraid to use that good olive oil and lots of garlic,i love my food very hot ,so if you like your food spicy add some type of hot pepper ..THIS RECIPE IS FOR YOU MASTER JOE,

    Ingredients

    • 1box of whole grain pasta [penne]
    • 1pound of japanese eggplant cut in 1/4 inch slices
    • 1pound of zucchini cut in 1/4 slices
    • 6 plum tomatoes cut in half
    • 1/2 lb mushrooms sliced
    • 3 cloves of garlic sliced
    • 3 tbls olive oil
    • 1 cup fresh parmigiano reggiano cheese
    • 3 tbls chopped fresh parsley
    • 2 tsp oregano
    • 1 tsp fresh thyme
    • 1/4 cup chicken broth
    • salt and pepper to taste
    • optional 1 diced pablano pepper

    Directions

    1. Cook pasta set aside
    2. spray a large sheet pan with spray
    3. take all the veggies and the garlic and pablano pepper and place on the sheet pan brush all the veggies with olive oil salt and pepper preheat oven to 375 degrees bake till soft and brown about 15 minutes
    4. remove from oven in a baking pan brushed with olive oil put a layer of veggies then a later of pasta on each layer put parsley oregano and some cheese till you have all your layers done,pour your chicken broth over the top add the rest of the cheese and bake till brown and bubbly this is healthy and delicious ...enjoy
