Baked Chicken Thighs with Sweet Potatoes & Collard Greens

- 4 Chicken Thighs
- 2 sweet potatoes (peeled, cubed)
- 16 ounces Fresh Collard Greens
- 1/2 whole onion, quartered (for flavor)
- 2 slices thick Bacon (for flavor)
- salt and black pepper, to taste
- 1-1/2 cup Low Sodium Chicken Stock/Broth
- one teaspoon rosemary
- one teaspoon thyme
Directions
- Pre Heat Oven 375 F
- Using a deep baking dish add Chicken Stock, chicken thighs, seasonings, bacon slices, onion quarters, spread cubed sweet potatoes around perimeter of baking dish, add collard greens, cover with aluminum foil and put into the hot oven.
- Bake for 50 minutes.
- One Pot Dish with great flavors, enjoy!
