Baked Chicken and Pineapple
Ingredients
- 4 Chicken breasts, skin removed
- 1 Can Unsweetened pineapple chunks in juice (13 1/2 –oz.)
- ½ C. Wheat Bread Crumbs
- 2 T. Chopped fresh parsley
- ¼ t. Ginger
- ¼ t. Nutmeg
Directions
- Preheat oven to 350 degrees.
- Dip breasts in pineapple juice. Combine crumbs, parsley, ginger and nutmeg. Coat chicken with mixture. Place in non-stick baking pan. Spoon chunks of pineapple around chicken pieces and pour remaining juice over all.
- Bake for 1 hour.
