    Looking for a new way to serve cauliflower? Try this vegetable casserole.

    Ingredients

    • 3 Cups Cauliflower, Roughly Chopped
    • 1 Cup Fresh Mushrooms, Chopped
    • 1/2 Cup Red Onion, Chopped
    • 1 Tbsp. Olive Oil
    • 2 Tsp. Lemon Juice
    • 2 Tsp. Cider Vinegar
    • 1/2 Tsp. Salt
    • 1/4 Tsp. Ground Black Pepper
    • 2 Cloves Garlic, Minced
    • 1/2 Cup Scallion, Chopped

    Directions

    1. Heat oven to 350ºF. Spray square baking dish, 9x9x2 inches, with cooking spray.
    2. Mix all ingredients except green onions. Spread evenly in baking dish.
    3. Bake uncovered 40 to 45 minutes, stirring occasionally, until vegetables are tender and golden brown. Sprinkle with green onions.

        Thanks! Personal opinion, roasted is the best way to enjoy cauliflower. If you like broccoli, my colorful oven vegetables is really good too.
