  • Baked Artichoke Parsley Cheese Squares

    Ingredients

    • 1 jar marinated artichoke hearts - (12 ounce) liquid removed, liquid reserved
    • 4 x green onions finely minced
    • 2 x garlic cloves finely minced
    • 4 whl Large eggs beaten
    • 2 Tbsp. Atkins Bake Mix
    • 1/2 tsp salt
    • 1/4 tsp freshly-grnd black pepper
    • 8 ounce Monterey jack or possibly pepper jack cheese shredded
    • 2 Tbsp. minced fresh parsley

    Directions

    1. Heat oven to 325 degrees. Chop artichokes and set aside. In a medium skillet, heat reserved marinade liquid 2 min over low heat. Add in green onion and garlic; saute/fry 5 min, till softened.
    2. In a mixing bowl, combine Large eggs, bake mix, salt and pepper. Thoroughly fold in cheese, parsley, artichokes and onion mix.
    3. Transfer to an 8- or possibly 9-inch square baking dish. Bake 30 min, till set. Cold slightly before cutting into squares.
    4. This recipe yields 8 servings.
