My super talented male whipped this one up for me last night while I was holed up in bed with a broken leg. The thin and crispy pizza base (inspired by one of the lovely ladies I have the pleasure of working with) is by far the quickest and easiest I've come across.

    Ingredients

    • Dough:
    • 1 cup SR flour
    • Pinch of salt
    • 1/3 cup milk
    • 1 Tsp extra flour for dusting
    • Topping:
    • 1/3 cup crushed tomatoes
    • 1 Tsp tomato paste
    • 1 clove garlic, crushed
    • 1 tsp dried basil
    • 1 tsp dried oregano
    • 1/4 red onion, diced
    • 1/3 capsicum, diced
    • 3 rashers shortcut bacon, diced
    • 2 mushrooms, sliced
    • 6 fat-free semi dried tomatoes, halved
    • 1/2 avocado, sliced
    • 1/2 cup grated cheese

    Directions

    1. To make dough, combine flour, salt and milk and kneed until smooth. Then simply roll out and transfer to a lightly dusted pizza stone or pan.
    2. Combine tomatoes, paste and garlic in a small bowl and spread over the base.
    3. Sprinkle with herbs and apply remaining ingredients in listed order.
    4. Bake for around 10min or until cheese is melted and base is cooked.
