Baby Corn Manchuria (Dry)
Ingredients
- Baby corns - 25-30 (i picked up 3 packs from a store which gave me 25), cut into 1' inch pieces
- All purpose flour - 4 table spoons
- Corn flour - 3 table spoons
- Red chilli powder - 1 table spoon
- Green Chillies - 4 , finely chopped
- Spring onions - 2 stalks , finely chopped
- Garlic pods - 2, finely chopped
- Ginger - 1/2 inch piece, finely chopped
- Capsicum - 1 , finely shredded (optional0
- Tomato Ketchup - 1/2 cup
- Coriander leaves - 2 table spoon , chopped (optional)
- Salt - to taste
- Oil - to deep fry
Directions
- 1. Take the corns in a broad vessel and boil for 5 mins ... Strain and keep aside .
- 2. Take a broad and big bowl add the chopped baby corns, all pupose flour, corn flour, salt and red chilli powder .
- 3. Sprinkle some water and mix .. coat the batter to all the corn pieces .
- Method :
- 1. Heat a deep pan with the oil ... Now fry the baby corn till they turn golden brown.
- 2. Fry them in batches and keep aside .
- 3. Heat a vok with a table spoon of oil on a high flame and add capsicum .. fry for 2 mins and remove from the pan and keep aside ..
- 4. Now add green chillies, ginger , garlic and spring onions to the remaining oil in the vok .. fry for 2 mins ..
- 5. Add the tomato ketchup and fry for 2 mins
- 6. Add the fried baby corn and toss.
- 7. Add the fried capsicum and mix well.. garnish with coriander and Serve hot !!!
