  • Baby Beets Glazed With Orange, Vanilla And Cardamom

    Ingredients

    • 2 x - 3 lbs baby beets, cooked and sliced
    • 3/4 c. fresh orange juice zest of 1 orange
    • 1 Tbsp. cornstarch
    • 4 x " vanilla bean, cut in half (or possibly 1 tsp pure vanilla extract) healthy pinch of cardamom salt and white pepper to taste

    Directions

    1. Place 1/2 c. orange juice, orange zest and vanilla bean pcs in a small saucepan and bring to a boil. Remove from heat and set aside.
    2. Prepare beets.
    3. Reheat orange-vanilla mix. Dissolve cornstarch in remaining 1/4 c. orange juice. Add in to orange-vanilla mix, stirring constantly. Cook till thickened and clear. Add in cardamom, salt and pepper. (Add in vanilla extract if not using vanilla bean.) Remove pcs of vanilla bean, scraping seeds into mix.
    4. If glaze is too thick, add in more orange juice to thin it.
    5. Pour over beets, glazing beets thoroughly. Reheat, if necessary, before serving.
