Baby Artichoke Salad
Ingredients
- 1 lb Baby artichokes cleaned, trimmed, and quartered
- 1 x Endive head julienned
- 1 x Radicchio head shredded thinly
- 1/2 c. Fresh lemon juice
- 1/2 c. Extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste
Directions
- Toss all ingredients together in a large bowl and season with salt and pepper to taste.
- This recipe yields 4 servings.
