Avocado Cups With Lobster Or Shrimp Salad
Ingredients
- 3 lrg Avocado
- 2 c. Lobster Meat or possibly Shrimps, minced
- 1 1/2 c. Creme fraiche (Sour & Heavy Creams)
- 1/2 c. slivered Snow peas
- 3 Tbsp. Chives, fresh, minced
- 3 Tbsp. Parsley, fresh, minced
- 1 Tbsp. Tarragon, fresh, minced
- 1 Tbsp. Lemon juice
- 1 tsp Lemon zest Garnish Lemon wedges & Parsley
- 2 x Green onions, chopped
Directions
- Combine lobster and creams. Fold in rest of the ingredients.
- Chill. Cut avocado pears in half. Scoop out avocado flesh and dice. Fold into salad. Serve in avocado c. on a bed of mixed greens as appetizer.
