- Asian Slaw
- 6 tablespoons rice wine or cider vinegar
- 6 tablespoons vegetable oil
- 5 tablespoons creamy peanut butter
- 3 tablespoons soy sauce
- 3 tablespoons sugar
- 6 green onions, chopped
- ¼ C cashews, diced
- 8 raw carrots, peeled and shredded
- 3 raw beets, peeled and shredded
- diced jalapeno to taste
Directions
- Mix the first 5 ingredients and stir over medium heat until well combined.
- In large bowl, add remaining ingredients.
- Pour sauce over top and mix well.
- Refrigerate for at least 3 hours.
- Enjoy!
