  • Asian Beef With Ginger

    Ingredients

    • 2 Tbsp. Vegetable oil
    • 1/2 tsp Finely minced fresh ginger
    • 1 x Garlic clove peeled and finely minced
    • 1 c. Sliced onions (2 med.)
    • 1 x Green pepper, in 1/4" strips
    • 1 c. Diagonally sliced celery (3 med. stalks)
    • 1 c. Beef stock preferably homemade
    • 2 Tbsp. Soy sauce
    • 1 tsp Granulated sugar
    • 1/2 tsp Salt
    • 1 Tbsp. Cornstarch
    • 1 lb Boneless beef steak sirloin or possibly round very thinly sliced
    • 3 med Tomatoes (1 lb.) peeled and quartered Salt and pepper to taste
    • 4 x Servings warm cooked rice

    Directions

    1. Note: To vary this dish, add in broccoli florets or possibly bok choi, coarsely minced.
    2. In a wok or possibly heavy skillet, heat the oil. Add in ginger, garlic, onions, green pepper and celery; saute/fry several min, stirring, till tender-crisp.
    3. Remove vegetables. (Can be done up to this point in advance, if you like.)
    4. Combine stock, soy sauce, sugar, salt and cornstarch in a small bowl; set aside.
    5. Heat skillet, adding more oil if needed. Add in beef and sear quickly, stirring frequently, several min. Add in stock-soy sauce mix and cook, stirring constantly, till thickened. Add in reserved cooked vegetables. Add in quartered tomatoes and heat through.
    6. Serve with warm cooked rice.
