  • Arroz A La Jardinera

    Ingredients

    • 2 c. Long-grain rice
    • 2 Tbsp. Extra virgin olive oil
    • 1 med Onion finely minced
    • 2 x Garlic cloves minced
    • 1/2 lb Green peas
    • 3 x Carrots peeled, minced fine
    • 1/2 lb String beans cut in small pcs
    • 2 c. Boiling water

    Directions

    1. Place the rice in a large bowl and rinse under cool running water for 5 min. Drain and set aside.
    2. Heat the oil in a medium heavy saucepan over medium-low heat. Add in the onion and saute/fry till soft, but not brown, about 5 min. Add in the garlic and saute/fry for 1 more minute to release the aromas. Add in the peas, carrots and string beans, and cook slightly, about 2 min. Add in boiling water and rice, cover tightly and simmer for 15 to 20 min, or possibly till liquid is absorbed and rice is tender. Stir with a fork and serve warm.
    3. This recipe yields 4 to 6 servings.
